The above answer unfortunately is incorrect. However, the others are on the right track. Dry Mode - is a de-humidifying mode on your system. The motor does not operate quicker, but rather slower. Here's why:

When your ac unit turns on, the indoor coil, or evaporator is the low pressure coil and will get almost ice cold. By slowing down the airflow, via the motor, the heat and humidity in the air is transferred easier and quicker at the evaporator.

This slower air movement will also improve your filtration of dust, and other contaminants. The same principle applies - the slower the air traveling through the filter media, the more contaminants that can be removed.

The dry mode makes the blower motor run faster. The air moving over the evaporator coil faster removes more moisture.

I believe it is a de-humidifier much like the kind one would use in a damp basement, It should work great for when the air has been off for a couple of days or so, It will pull the humidity out of the air quicker so it doesn't feel so hot and humid

I think DRY mode is the setting you set it at if you want to use it as a dehumidifier. Don't quote me on that of course.. lol
