How secure is peer to peer?
For example in some countries which are heavily censored i.e. China, Tunisia,etc. can the Internet "Gestapo" check what one is downloading and/or intercept?

How secure is peer to peer, like EMule, LimeWire?

all p2p are not secure,you can infect your pc easily with viruses and trojans when downloading programs from them.

Limewire is fine for music,Ares is good in movies....eMule is fine in all things especially old ones that are hard to find,but you should protect your self with a good firewall and a good antivirus in real time scan mode.

Peer to Peer or "Ad Hoc Mode" is not secure at all. There is not any encryption unless you both add at your own ends.
