Having younger children, I think that Port Orleans will probably work out better for you.
The main reason is that Port Orleans is a lot smaller than Caribbean Beach and is also laid out better. Caribbean Beach is more spread out, which just means a lot more walking. Having little ones, that can make things a little more difficult. It is also nice to have a short walk to get to the pool, food, etc.
The other reason is the pool. French Quarter has a really great pool and is probably the most popular for kids, among the moderate resorts.
Finally, Caribbean Beach is an older resort and I have been hearing a lot of complaints about it. I was hearing rumors a while back that Disney may close it down, but more recently they are saying they are going to be doing some updating to improve it. I've not stayed there recently, but from what I have been hearing it is beginning to show its age a little more.

definitly the port orleans french quarter-not the riverside. the carribean hasn't been renovated since it opened 30+ years ago and everythig looks very outdated and you can tell. also, all of the buildings are very spread apart, so when you take the bus to get to the park you have to make many stops just to pick up people, and same goes when you come back and just want to get off the bus. i highly reccomend the port orleans french quarter, because it is smaller and there are alot of gardens and the whole premisis is like new orleans streets with creativlt themed name for the streets. i also reccomend this hotel because it has the best pool i have evr seen at a disney resort. i usually stay at deluxe resorts, until this februrary when i stayed at the french quarter, and every single person in my family thought it was way better than any deluxe resort. the pool though is so neat. it is huge and has a sea serpent running through it, and the water slid is in the head of the serpent. there is also a bunch of crocodile saround playing instruments and it is so neat! when i stayed there it was over mardi-gras, and since the hotel is themed this way, they had a parade throughout the hotel and threw candy and beads at you. the riverside is way to crowded. it is undergoing renovations now, so if you stayed there you would have to eat at a different resort. it is also very counrty-ish and wasn't really my style. the port orleans is the best, and you must stay there. i am staying there when i go back in feb. 2008, and have fun!

I have to go with Port Orleans. The Caribbean has a fun theme, but it is in desperate need of a rennovation and I believe is on a list for just that.
Port Orleans The French Quarter is my preference (over Riverside location) and has a really fun Dragon Slide pool, wonderful New Orleans style food, great shopping, horse carriage rides, river boat tours and more. I think the pool would be a huge highlight for your kids!
Don't out-rule Coronado Spings though either. It is in the same moderate resort price range, is beautifully kept, has a really fun pool with Myan Temple Slide, has great Mexican dishes and fun shopping and kids activities.
