In addition to the other reasons listed above, fish also use color to communicate. We don't need to do that as we have other ways of communicating.

I think fish use their colors to attracts mates or perhaps scare off predators. It helps fish living near coral to blend in with the bright color as well, so predators can't see them as well. Usually in animal species, multiple colors and stripes help break up the animals shape, to make it harder for predators or prey to spot them. Some fish that live away from coral, usually are blueish or silvery to blend in with the water or brown or grey to blend in with the ocean floor and rocks.
Humans (and other primates) don't live in that type of environment, so having bright colors would make us stand out to much to potential predators.

We are colorful... Black, White, Light Brown, Yellow, Oompa Loompa Orange, Blue Man group. We just don't have many colors....

well they aren't all colorful, but nemo (clown fish) is colored that way to blend in with his surroundings
