The woman's water you are referring to is called the Amniotic fluid. This contains proteins, carbohydrates, lipids and phospholipids, urea, electrolytes, and more of fetal urine (in the later part of gestation). There maybe salt in it (from electrolytes and urine).

Nope, just normal body fluid it doesn't change from what it was inside her unless she is in labor and the baby comes with the water and you have a big mess.

this water is of a complex composition (organic and inorganic salts, cells, peptides, urine, and much more) and if you leave the water to evaporate, the rest will just rot.
