Is mace a workable deterrent to a black bear in the wild, or will it just piss it off?

Pepper spray will buy you some time for sure. The only real deterrent to a hungry bear is still a firearm though.
The thing about pepper spray is that you need to be right in the bears face before you use the stuff. If you try hosing the bear from about 30 feet away it just finds the stuff interesting.

probably 50/50. It will piss off the bear, but the bear might also get spooked and run away. Still pissed off, but at least it's moving away.

If it's hungry it won't give up. If it isn't interested in eating you then yeah it would probably work.
