I can only tell you about old rock 'n roll: if you like guitar solos, anything by Jimi Hendrix, Eric Clapton (Cream, Blind Faith), Carlos Santana, and Duane Allman (Allman Brothers Band) should do it for you. Check out "Sea of Joy" on the "Blind Faith" album, or "Southbound" by the Allman Brothers. Keith Richards' licks on "Can't You Hear Me Knocking?" from the Rolling Stones' "Sticky Fingers" album have to be his best work; and Quicksilver Messenger Service, on their "Happy Trails" album, do a rendition of "Who Do You Love?" that puts Jim Morrison to shame. If you like progressive jazz, John McLaughlin is a great place to start - listen to the "Inner Mounting Flame" album, where he plays guitar with Mahavishnu Orchestra.
