1) get foods out of their growing season in the local environment
and
2) cut costs
And for big business it's 2 that is the deciding factor over the environment almost every time

Because it is sometimes cheaper.
Because some things won't grow in some climates.
Because it is what the customer wants, and there's good money in it.
And lastly, because restaurants are not farms. Olive Garden, for example, is not really a garden where olives grow. McDonalds does not grow tomatoes to slice and put on your sandwich. Burger King does not have onions and lettuce growing out back. Growing the produce is not their business.
Particularly with chain restaurants, the desired effect is for the food to be exactly the same whether you're in NewYork or LA or Orlando. It would be healthier to use local produce, but the supply would be inconsistent. To supply a restaurant or grocery franchise, massive quantities are neccessary.

the place I presently stay, Oklahoma, barbeque is crimson meat brisket! They smoke it for hours and serve it with a notably spiced tomato based sauce. once I lived in southeastern North Carolina, barbeque is crimson meat, and in elementary terms crimson meat. Well I like pineapples but they won't grow in my back yard.
A lot of shipping is done because some things aren't available in certain areas.
Though it is good to support local grocers.
