This is probably where it originated:
The original piece is part of Bach's Orchestral Suite No. 3 in D major, BWV 1068, written for his patron Prince Leopold sometime between the years 1717 and 1723.
The title "Air on the G String" is not original. It comes from violinist August Wilhelmj's late 19th century arrangement of the piece for violin and piano. By transposing the key of the piece from its original D major to C major, Wilhelmj was able to play the piece on only one string of his violin, the G string.

It comes from a Native American word.
Many etymologists believe that it originated from the native word "geestringi." Apparently this was an item of clothing worn by some Plains Indians. The word was changed to the more English sounding "G-string."

The G-STRING is the oldest form of clothing known to mankind, dating back 75,000 years ago to sub-Saharan Africa. It got its name from the fact it was intended to cover or hold the GENITALS. It is worn by both men and women today--sometimes as a bathing suit, sometimes as underwear. Compared to the thong underwear, it has less material, hence a stringlike appearance.

I believe it to be the thickest in a bass guitar which when tuned in is in the key of G.
The skimpy thong knickers were called G strings because of their similarity.
