My fridge is collecting puddles of water and then freezing. My freezer above only has a few items in it, so it is not stuffed full. I even put a bowl inside the back shelf of the fridge to collect water and this is now one solid block of ice.. all my temp. are set to recommended settings.... please help.. and mainte. things I should do to fix.

Though your description is extensive, I am not sure of all the details.
Is the ice in the freezer section? Is it a self defrosting freezer?
If the answer to both of those questions is yes, then the likely cause is: something is plugging up the drain line from the freezer.
It is a common problem. A bit of paper from a package may have been torn off and got stuck in the drain.
When the freezer runs through its automatic defrost cycle, the moisture must drain out of the freezer compartment or it will freeze into a block. A drain line will carry the water to a pan below the refrigerator to be evaporated by the heat from the compressor or the condenser.
If the drain is plugged, the water will refreeze and never thaw out unless you shut down the refrigerator and defrost it manually.
Once it has thawed, watch where the water flows to. The drain will be located at the lowest point. Find what is plugging the drain and remove it.

It sounds like it may be the damper (a little door that opens and closes between the freezer and fresh food compartment) may be jammed open. I would recommend taking all the perishible items out and defrosting the entire frig. Perhaps some ice or something is jamming the damper door.

Frost free fridges have heaters in them to melt the frost. It has a sensor on it to tell when to melt the frost and it shuts off the fridge unit at the same time. Sounds like your fridge unit isn't turning back on right away. I had a fridge that needed a new sensor when it was doing something similar.

You might want to check your seals, it could be that warmer air is getting in there and creating condensation, then freezing...

IF IT FREEZES UP, IT NEED FREON, IT SOUNDS BACKWARDS, BUT THATS THE WAY IT IS.
