why do people bend down while getting off a chopper?

It's because the blades sag from the center going outward, ie the blade is closer to the ground as you move away from the chopper. You don't want to get hit by that. Of course this varies from chopper to chopper.

The wind, particles being thrown around in the air, large objects spinning at high speed over your head. Take your pick.
You do not have to bend down it is just human nature to avoid something that looks dangerous.
An example where you do not bend down is the presidents new chopper which has a door that allows him to exit without ducking.
