I have an oscar pretty good size in a large tank. He has a dino eel and pleco with him. My question is how do I tell if it is a male or female? Can I get it a mate after being without one for so long. He is aggressive towards his food but not his tank buddies they know to steer clear of it.

My tank is huge and I call it he because he has the personality of a male.

There's really no physical way to tell the difference between male and female Oscars unless you A) Dissect them or B) Observe mating between a pair.
You could also take the fish out and check it by venting it, but I wouldn't recommend this unless you want to be completely covered in stinky water and have your hands chopped up by its dorsal fin.
Otherwise, good luck :)
Color is not always a sure-fire indicator unless you've got multiple fish in one tank and the conditions and feed have been consistent for a very long time.

For the fish you listed, you would need a tank of about 75 gallons, and to add another Oscar, you would need a tank of close to 115 gallons. If your tank is that big, it won't be a problem. Oscars are actually quite peaceful with fish their own size.

The best way to breed oscars is getting about 6 of them in a 125 gallon tank. Allow them to pair off.

You must have over 100 gallons to breed oscars. They dont breed when small, so you will need to have a huge tank to breed 2- one foot+ fish.

when oscars mate they tend to get very aggressive towards any other fish in the tank.
so its not aggressive now with its tank mates but it would be and may kill its tanks mate that its with now.
also a mated pair of oscars need a tank of about 110gal for just the pair
