You want to create a pattern without a pattern, or sew a dress without a pattern?

If what you mean is the latter, I'm not sure trying to free-style sewing a dress without a pattern will be too easy for a beginner. Is it that you don't want to buy a pattern? because you can find lots of free patterns online, like here

Since you are a beginner, why not buy a pattern so you can see how it works? Jo-Anns sells many patterns for less than $2.00. It will come with all the instructions and fabric suggestions in one place.

Is this a dress you already have and are wanting to copy? If so, you could very gently take the dress apart, copy it onto paper (freezer paper or brown wrapping paper work well, but do not use newspaper, because the ink smears). Be sure to label the pieces correctly, and put some marks to show where pieces should be joined together.

I agree with the first answerer. I would not attempt that as a beginner.

you might be aiming a little high. maybe you should start with just buying one from sears and cutting out the tag. they'll never know.
