Anything Mexican. I make this:
Tortilla Casserole:
10-7 inch flour tortillas
1 LB cooked ground turkey (less fat than beef)
2 cans diced tomatoes, drained
1 package taco seasoning
1/2 white or yellow onion, chopped
3 green onion stalks, chopped
2 C. shredded cheddar (or monterey jack)
In a skillet, combine tomatoes, white onion, taco seasoning, and ground meat. Simmer for about 5 minutes. Lay one layer of torts in a 9 X 13 inch baking pan (About 3 torts). (Spray pan first). Layer one with meat mixture and a handful of cheese, then another layer of torts, then meat mixture, etc. End with a layer of meat mixture. Top with remaining cheese and sprinkle with green onions. Bake at 350 F degrees for about 15-20 minutes or until cheese is bubbly. Everyone loves this here!
