You can get 'splash backs' I think they are called. They are plates that are fitted to the wall which you can wipe clean of the grease so you do not damage the wall. They are usually quite nice and decorative. You can get hem to match in with your kitchen.

I have tiles which I spray with furniture polish and shine. This makes it easy to remove the grease splashes.

Many kitchens today use tiling as a backsplash and then carry it around the rest of the above counter walls as well. You can also use stainless or mirrors....anything that protects the wall and is decorative too.

You can buy netting screens or tile splash backs. Should be able to get them from Homebase, etc, or any habberdashery (I love that word).
