Don't worry they're not going to throw you in jail. I work for a casino and all they'll do is just not pay you!
If you win any jackpot that requires a W-2 they'll ask for ID and SSN if they think anything is not right they might ask for a second form of ID like a Credit Card, but honestly they just won't pay you and if you make a scene they'll trespass you from the casino.

So if you're sneaking into a nightclub or playing penny slots you might be ok, but I wouldn't do any "real" gambling with a fake ID.

Yeah, they WILL notice... They DO look at the picture - because they noticed my hair was a different color in my license photo. Security there is NOT dumb, unlike in some small towns. If you hit a jackpot, you need to give your SSN also - and the IRS is going to notice that if the name claimed on the jackpot and the name on the SSN don't match.

If you try the id.... Hope you like jail.

If you plan on gambling it would be a really bad idea to use a fake ID. Having fun and drinking you should be OK. The only place that I was carded was going into clubs, the worst thing that they will go is take the ID. The casino will send you to jail.

I hate to tell you but the casino's gaming license depends on them enforcing the law. your odds of not getting carded are not good. If you hit a jackpot that pays out something like 300x's your bet, they will need your ss number so you can pay taxes on your winnings.
