Not the best idea for several reasons, though if your computer turns stuff off after it's been idle for a time you might be ok.
First off, most fans are not built to run 24/7. Consider putting in a heavy duty power supply fan and cpu fan.
Memory gets fragmented over time (by the apps that come and go), so you probably experience a serious degradation in performance after a couple of days.
And then there's the potential for a power spike to trash your computer. I'm assuming you have one of the $7 surge protectors most people get.

You can hibernate it by going to start>turn off computer. then while holding the shift key down, Standby will say Hibernate and use that to shut down. As far as leaving the computer running for a couple of weks ideally it is a great idea from a motherboard's point of view. Constant start up and shut down heats and cools the solder joints on it weakening it.

Ideally, you should shut it off when you are not using it.
Either that, or set it to go into standby when you are not using it.
There is no set time limit for how long a pc can be on.

I usually have my computer after 30 minutes go into standbye(puts the computer into a low powerstate((short of shuttingdown))) but if you dont have a really highend desktop its ok to leave it for that long................but the power converter in your pc may fry(its what happened to mine after 5 years of usage)

you should turn it off after you're done using it. I turn mine off everytime I go outside or go to sleep.
* I warn you that every time you RESTART( Not turn off and turn it on again) you waste 8 ours of energy. *
