I know this probably will not happen during the lifetime of the planets involved, but hypothetically, if the planets would be around forever, wouldn't they all be aligned at a given point? This would happen once every X years?

Yes they would. On 5 May 2000 Mercury, Venus, Mars, Jupiter, and Saturn (plus the Sun and the Moon) were aligned.

The planets will all approximately align to within a few degrees of each other every so often. But if you mean perfect stright line alignment, that depends on whether the ratio of their orbital periods is a rational or irrational number. If the ratios of all pairs of orbital periods is rational, then they will come into perfect alignment. If even one of these ratios is an irrational number, then all planets will never perfectly align.

They align (more or less) about every 176 years. But it's not a straight line, as each planet's orbital plane is a little different.
