What would happen to someone if they, for a joke stuck a bb gun up at a sales assistant and yelled "Give me all your money", when the sales assistant does the man or woman bursts out laughing and says "I was only kidding" and walks away?

They would get what they deserved.
Intimidation, forced aggravated robbery, causing mental harm, terrorism, and the refusal to own or carry a fire arm for life.

It is against the law to commit such a "joke". They are subject to arrest and maybe charged at the discretion of the DA. Not a good situation to find yourself. He can charge you from a misdemor to a full felony. It all depends on what he feels like that particular day. Whatever he decides, you're hammered.

Arrested/cited for assault. It is quite unlikely, but possible, that the sales clerk may also have a civil claim for intentional infliction of emotional distress.

They could still be arrested if they are reported. It is now considered a terror threat in the US and it is no joke to the law.

They would be arrested and taken to jail on charges of Armed Robbery (once you started the crime it was considered comitted), intimidation, etc.
