How can I learn about Excell formulas?

Place an = in a cell. The function assist will appear just above the A column. Click the dropdown list to select a function.
At the bottom of the list is More Functions.. Click on this to get a complete list. This list can be a full list or broken down by function type.
Select a function and click OK. The function wizard appears to give you step by step instructions. Use the help with this function to get full help.
Basically all you need to do is to learn the principal of how any function works and then go through the list to find out what functions are available. Any questions then go to help.
Now all you have to do is use the functions to do data manipulation that works.
