I've never left windows open during a storm but a 5 gallon jug of water tipped over once and emptied onto the floor. Basically just use a wet vac, lots of paper towels and leave the windows open when its hot out.

I know of no advantage in doing this. This sounds like a derivative of the old myth that you should open a window if a tornado is going to strike, in order to alleviate the pressure difference. That has been shown to be false. You could open the windows if you simply want to air out the building, otherwise it is not advisable.

Marine supply stores sell chemical air dryers that use calcium chloride to draw moisture from the air. They are inexpensive, can be used over and over again and work. You just dump the water out of the trap and replace the calcium when its depleted.
