I prefer stainless steel to ceramic. Ceramic does chip, gets pot marks and laserations which hold germs.

Stainless steel is easy to maintain. If you are concerned about noise you can buy rubber in a can and spray the bottom. Just be sure to tape where ever you do not want the rubber. I did this with my stainless steel sinks and there is no echo sound with running water.

Some stainless steel sinks have sprayed on insulation for noise.

When I lived in my last apartment, for less then a year, I can't tell you how many dishes I lost to the ceramic coated cast iron sink in the kitchen! Just the slightest tap or slip caused them to crack or break.

I have a stainless steel kitchen sink now. The only thing I need to do is bleach and scrub it once a week to keep it sparkling. Had it for 7yrs. not a single broken dish!

Cast iron sinks will keep the water warm longer. They are also less noisy since they are thicker. Care must be taken to avoid chipping the surface and I would recommend a rubber pad in the bottom to prevent scratching from metal pans.
Stainless steel is more maintenance free since it will not scratch easily. You cannot leave potato parts/peels in them as it will cause dark spots.
