Iron-enter into iron island and head down the left side. Battle the trainer and head up the hill and you'll find it
Stone-Found in the underground while using the Dowsing poketech feature

Ive forgotten which part to go to find the iron and the stone plate, but as another option, you can dig for it underground.
It is the harder option, but you may get lucky ( I found the flame, fist, mind and insect plates underground).
There is no ??? plate as i know of. The different coloured plates allow the god pokemon Arseus to change its type, so there should be no need for another plate.
