Lemon Posset

Lemon Posset

Serves 2

284ml carton of double cream
75g caster sugar
2 medium lemons, juice of

Serve with your choice of blueberry compote; strawberry coulis; fresh berries and a dusting of icing sugar; or biscuits for dipping.

Pour cream and sugar into a small saucepan. Slowly bring to the boil, stirring constantly to dissolve the sugar. Once boiling cook for a further three minutes, still stirring constantly.

Remove from the heat and pour in half the lemon juice whilst stirring the mixture thoroughly. It should start to thicken instantly. Taste the mixture and if its not quite tart enough for your tastes then put a little more juice in. It should be nice and tangy but still very rich.

Allow the posset to cool for approximately five minutes and then pour into two glasses. The posset will start to visibly thicken as it hits the cool glass. Cover with clingfilm and chill in the fridge for at least 3 hours. The posset should be quite firmly set when you come to serve it.

When I'm in SE Asia I like chilled mango above everything else. When I'm in the US I don't usually eat dessert(probably why I manage to stay fit and most of us as tubs).

My absolute favorite dessert in the world is a Black Forrest cake from Madonna Inn in San Luis Obispo CA http://www.madonnainn.com/ (around long before the artist was named such) Its a really neat hotel as well, they have 100 different theme rooms, only been in about 10 of them though Here's the cake http://www.madonnainn.com/bakery/cakes2.asp

I simply love the Marks & Spencer Trifle but sadly that was UK days.

So, back home, I will settle for the local ice kacang with lotsa nuts or Panna Cota in the Italian Restaurant, or simply a few slices of juicy mango.....yum!

My all favourite is Gulaab Jamoon.

But if you're talking about Malay desserts, my favourites are:
- dadeh
- buah Melaka
- kek lapis Sarawak

Not fair! It's hard to choose just one.
Creme brulee, sago pudding with gula melaka & coconut milk, bread & butter pudding, tapioca with coconut milk, durian pancakes... gotta go get food now!
