The original use was to imply their is more to be said, and you hope the reader will read into the sentence a previous conversation. It's a hold over from the old stile of typing used before the age of computer's. They can be used to say, fill in the blank. For an example ( My boyfriend got me... And now he won't talk to me.) You have to hope others you don't want to read your mail will not gess the blank.

It's like you're going to finish something, but don't want to do it. An example would be if I were going to tell you all about my day, I might say: This morning I got up, went to the bathroom, brushed my teeth..... It's just a simple way of telling you that there is more than what you are reading - or a continuance.

I use it to... well, make a break in my thought. Or, if I want to use a few thoughts together, but not create a whole sentence. According to wikipedia, I don't think I use the elipsis correctly.
OOPS...
