Aside from the garlic, butter, and wine they flavor it with, it tastes like a chewy clam or oyster and if overcooked it has the texture of grizzle.

Chicken. Try frog and crocodile too (not joking). They taste like chicken too. Not kangaroo though - that tastes more like venison.
