The polling is quite scientific and reasonably accurate. If you want numbers that are a little more specific, then fund-raising figures also are a sign -- not a perfect one, but a sign -- of popularity.
Keep one thing in mind, though, especially now: The situation is very fluid. Make that very, very fluid. It is relatively easy for lightning to strike and for a candidate to come out of nowhere. Heck, Howard Dean did that, and then disappeared just as quickly. It's easy to guess that the nominees will come from the big three of each side (Clinton/Obama/Edwards, Guliani/Romney/McCain), but a breakthrough is very possible.

They conduct scientific polls. Though all polls have some margin of error. I good poll will project that margin and account for that when it is published.
