The only reason a server in a Mexican restaurant would say "Good Nachos" is if you asked her "are the nachos good ir bad?" And she would respond :"good nachos" buenos nachos... but I think you are referring to "Burnas Noches" instead, which actually makes sense and that is how the staff says goodbyr to you after you have paid your check... it simply means "Good Night" that is the literal translation, a more accurate one would be " have a nice evening" and you would respond either with the same "Buenas Noches" or "igualmente" (likewise) or maybe add a Gracias at the end.

ugh each and every of the time!! And on the airport: "Have a good flight." "You too" on the movies: "savor your action picture." "You too" and then i think impolite, like i'm rubbing it of their face. Like "Oh wait. you will not savor your action picture. you're too busy cleansing up sticky soda residue..."
