One thats pretty easy to learn and not too expensive is plastic canvas. You can make a lot of different things even useful ones like coasters. I started out doing plastic canvas back when i was on bed rest during pregnancy. Ive progressed to doing counted cross stitch and I love it. I have done both of them in the car before. Also plastic canvs needles are not sharp they are blunted so dont have to worry about sticking yourself.

You can do scrapbooking with some prep time - bring pictures, adhesive, papers - you can have some mats pre-cut - you can do embellishments in the car, or journaling. They have lots of great kits out there - Michael's, Joanne's that could get you started.
Have fun - also books on CD are great - the new Harry Potter will be out soon - or the old ones are good! You can find them and many others) at your local library!

I would reccomend crocheting. Crochet can be really simple, or really complicated. In other words, if you're a beginner there are still things to make (like blankets, scarves, simple bags and hats) but you won't get bored because once you get the hang of it, you can start making more complicated things. If you're looking for some fun things to make, I would reccomend searching www.craftster.org/forum or getting the book "Happy Hooker"

cross stitch if a smooth ride - or use a thimble so you don't prick yourself silly lol
knitting
can't remember the exact name but- those round loom type rings they sell at ac moore and michaels that you wrap yarn around and work in a a circle to make socks, scarfs, hats, etc... come in blue yellow and red- diff size diff color...
braiding/knotting - bracelettes, key chains, ankelettes
not really a craft but.. puzzle books, fill ins, word find etc...

thumpergirl beat me to it. Plastic canvas is a nice craft because the needle is not sharp, so you won't jab yourself if you go over a bump. Take some carsick pills first though!

Crochet a throw/afghan for your bed. It is easy to learn, to do and all you need is a crochet hook and yarn. Very relaxing and in time, you can do it without looking, allowing you to see the sights along the way.
