I like to crochet and have recently begun crocheting little doilies. Not any fancy patterns or anything, but just circles. How often do I have to add a stitch to keep it from curling up? Thanks a lot for all your help!

Rule of thumb is about one in six, or add a stitch at six points in the work and you get a six sided piece rather than a circle.
But as the heights of the stitches can differ, so can the amount of stitches you have to add to keep it flat. You should keep an eye on it staying flat and not getting to wide (it will get wavy then,) and add as needed.
Better, easier and likely more fun to use patterns. I have done many of them before just working freehand again.

I think your best bet would be to get a pattern and follow it. I'm not very good at winging it, myself. But if you want to try it by yourself, just keep flattening it with your hand and see how it's laying. If it looks circular, keep going until it gets out of shape. You'll probably have to steam press it in the end anyway.
