An oversized unit will cool but will not remove humidity properly.A 3 ton instead of a 21/2 ton was installed due to a huge discount.

No it won't help. But you might try installing a dump damper or bypass damper which will dump some excess airflow from the supply trunk back into the return duct rather than into the house. This way it will prolong the time it takes for the house/thermostat to reach setpoint temp. and longer cycles increase humidity removal.

Also, see if your air handler is a variable-speed air handler. If it is, your in luck, have an AC technician setback the flow rate in the circuit board to 2.5 ton mode for longer cycles.

Everyone installing a new air handler or furnace should demand a variable speed system. They are way more energy effecient and comfortable.

The amount off freon has nothing to do with removing the humidity. The air from the house travels over the "A" frame in the furnace which is cooled by the condensing unit outside. The moisture from the air condensates on the metal fins of the "A" frame and is removed from the house. Reducing the amount of freon will cause the unit to operate less efficient.
I'm not an expert, but I don't think that 1/2 ton difference would cause a problem.

The 0.5 ton difference is substantial and can make a difference.

Removing some of the refrigerant will not help you. It will increse the energy consumption and not result achieving what you want.

The oversized unit will reach the desired temperature and shut off before it has removed the humidity. You end up with cool and moist conditions which are hardly comfortable.

No!! DO NOT drop any freon from a/c unit!! It is PERFECTLY ok to go up or down 1/2 ton either way as long as it isnt over that!! the unit will cool the same regarless!! I have installed MANY MANY just like that!! you are fine the way you are!!

thats probably why you got a discount,

reducing the refridgerant level will just reduce the ability to cool, it won't affect the ability to remove moisture.
