When I first read your question I was humbly thinking of real hobbies that I would like to have,
then I read some of the answers and the greedy little monster in me woke up.....
Soo I would have a collection of Porsche's, and drive them through every different country to see where the best driving is to be had. Then write a book about it so others can benefit from my hard hard work. See I am generous too. Oh and while I am out I would be looking about for big shiny stones to add to my humble collection.
I guess that is why I don't have billions, I am not responsible enough! :)

I'd bulid things! Model planes, boats, cars. Maybe id try restoring clasic cars to prestine condition, maybe take up skydiving. There are alot of things that you can do that you can call a hobby, some more expensive than others. but oh well, i'd have to stick with building things.

Oh grant making that would be fun. Have to anonymous so don't get swamped tho...and I would help new starts.
If I was being a bit less selfless, I'd agree with the holiday thing, and travelling into space if that were poss lol!

Start a large No-Kill Animal Rescue Center. Complete with a Vet and all the amenities for all animals.

Either trying to visit all the countries in the world or giving and helping out at charities as a full time volunteer.

Off road driving in jeeps, quads, bikes - anything! I would use my own land!
Also banger racing.
I know that chav lotto winner would be a nightmare of a neighbour to have but what he done looked ace fun!
I would also study. I would go to uni and gain degrees in interesting subjects that are prettty useless in the real world.

I maybe an exception here!!
But nothing will give me greater joy than to impart my knowledge to all.
I'd open a Special Literature class where i will teach the new generations absolutely free!!!
I will teach them the Ennglish Language and Literature for free!!!!!
Then I will employ someone to give them proffessional guidance and counselling

writing children's books, i know it sounds more like a job, i just think it should be considered more of a hobby because it would be doing something i would love to do!

Well I love to travil so i think i would do that. As it is i travil more then i should (money wise) but if that was not an issue i would travil all over the whole world....Nice Q by the way!
