As the body dies and decays muscles will start to atrophy (or shrink). This shrinking causes the body to react the same way if you voluntarily contracted the muscles.
It sounds like in this case, the muscles that control the eyelid atrophied causing it to open.

I can gaurantee that their eyelids did not just open. They may have been open because maybe the person hadn't been embalmed yet, but they certainly wouldn't just pop open. NO, bodies do not ever sit up. No, they do not move, and no their muscles do not "atrophy" to cause movement. Once you're dead, you're dead, no more movement. End of story. It is an old urban myth that bodies sit up. I have embalmed thousands of bodies and not one of them has sat up, moved or opened their eyes yet.

A lot of people die with their eyes open and they have to be glued shut during preparation. Our eyes don't permanently close once we die never to be opened again.

sometimes nerves can cause movements in dead people
sometimes they burp or sit up too I think, and they wouldn't complain about the haircut either
