I usually make Ma2loubet 2arnabeet
get 1 big 2arnabita or 2 smaller one...cut the small "trees" like my son calls them and put them in boiling hot water with salt for 5 minutes.
take them out of the water and fry them in oil.
now for the rice:
400 gr la7meh mawzet or fillet
1 cup hommos 7ab
2 cups rice
bhar asswad
mil7
cube maggi beef
7ab hail
krawya
bassal cut in small pieces and toom mad2ou2
fry the meat in some oil then put 4 cups of water and bharat and let meat cook until tender.
put the rice and maggi and the hommos and cook until rice is well done and water gone.
2libi tangaret el roz on a large serving plate (hence the name ma2loubi) and put the fried 2arnabit on top
serve with laban

1 Large Eggplant
Olive oil
Salt, Pepper
1 White onion
6 cloves of garlic
2 tomatoes
2 bouillon cubes
1 Teaspoon cumin
1 Teaspoon Coriander
½ Teaspoon Cinnamon
2 cups rice
1. Slice up the Eggplant, then use a fork to poke holes in the slices. Cover the slices with salt and let them sit for ½ an hour.
2. Slice the onions and fry them up until they are golden, then place them on the bottom of a large pot. Slice up the tomatoes, fry them slightly then place them as a second layer on top of the onions. Fry the Tofu cubes, or the lamb (they are optional) until they start to brown them put them in the pot.
3. Rinse the salt off of the eggplant and fry them until they are mushy. Then layer them in the put. Crush the garlic cloves and spread them out around the pot.
4. Place the two cups of rice in the pot, then add four cups of water. Bring the water to a boil. As the water is heating up, add the two bouillon cubes, the cumin, coriander, cinnamon, and salt and pepper to taste. After the water starts to boil, cover the pot and reduce the heat to a simmer and let the rice cook until it is done.
5. Once the rice is fully cooked, turn off the heat and let the pot cool for 10 minutes. Put the pot face down on a large serving plate, leave it for a few minutes, then slowly lift the pot. Serve the Ma’loubeh with yogurt and a salad on the side.

yeah
ma'loubeh means inversed or turned upside down
this food id made this way:
eggplant and some vegetables are fried
then they r put in the bottom of the pot with the meat
the above comes the rice and then they r all cooked together
at the end the pot is turned unside down on a big surving plate so that what was in the bottom becomes on the top
..........
its a great and delicious dish
i advise u to try it

I like mah'shee with stuffed grape leaves. I have had too many years of being force fed eggplant and okra, yuck. And I like my falafel, hummos and m'khellal.
My mom said ma'loubeh is made with fried cauliflower and meat and that it literally means "upside down", I guess that's why I was confused of where the eggplant come in. I don't like ma'loubeh either. I just want the grape leaves.

:) yes, i agree with above... it means 'upside down'.. cause at the end, u have to turn the dish on a plate or tray or something... and what u have put first becomes the top layer..
