They are called "In-Ear Monitors" they take the place of wedge speakers at the front of the stage. The sound man running the mixer controls what the artist hears. The artist can tell him what other instruments or vocals he/she would like to isolate and be fed into the earpiece.

Well, as a singer I definetely know the answer to this question

The ear pieces are known as:

'IN EAR MONITORS.'

They are used so that singers can hear what they want in their ears at the right level. For example, the whole band might be playing, but the singer may only want to hear piano and vocals...OR, they could have all the music going in one ear, and just THEIR vocal in the other. It's totally up to the singer...

They are expensive, therefore you probably wont see your local band at the club using them...That's why you always see them on big awards shows etc. They cost big $$$.
Also, when you see a singer pull one ear out, sometimes it is so they can hear the crowds reaction, or get a more natural feel...In ear monitors can feel a bit strange if you've never used them before.

Hope I helped! :)
