In other words, can one feel pretty confident that the results of any lab will be accurate?

The experiments are conducted by human beings. There may be some error while performing this. The reagents and samples are also the variables. Although the same experiment with same sample and reagents ought to give similar results, but rarely the doer may not be able to control and interpret results leading to variation in interpretation.

I would trust the results of the lab that my hospital/doctor chose to use, as they would have a history of dealing with that particular lab. If you have a doubt about the results of a DNA test, have the test run again at a different lab for a second opinion.
