Wikipedia shows the history of chopsticks, but not the reason they originated in Asia instead of Europe or Mesopotamia.

But they became of common use in the temperate zones where rice was the predominate domesticated grain, and that zone was mostly Asian, while in other areas wheat was the predominate grain and not cooked or eaten in the same fashion. Also bamboo was an available source of "wood" in Asia from which to make these early utensils.
