Alcohol and sugar are similar. Yeast has enzymes which break down the sugar into alcohol.

Yeast breaks down glucose and/or sucrose to make energy, in the form of ATP. Alcohol is a by-product of the regeneration of NAD, which is necessary (to accept hydrogen) so the yeast can continue to carry on glycolysis.

Yeast secretes an enzyme called Zymase which is essentially something that breaks down the larger carbon chains of glucose and sucrose (C6H12O6) to create smaller molecules of alcohol (C2H5OH)
