The problem would be in finding a new intake manifold that will fit the 280ZX engine. With all the retooling they did on the new issue, it is very unlikely that you could just take one off of an older version and expect it to fit. You will have to search the aftermarket tuners to see if such a thing is available. If it is, then you will also have to change out the computer chip because the one that is in there is programmed for fuel injection and will not allow a carburetor to run properly. You may be better off just swapping out the entire engine for one of the older models that was carbureted.

I owned a 1978 280z and i can tell you the injectors look complex but every day they will out preform the Hitachi SU carbs they replaced. No choke cables and lever next to the ash tray idle speed is controled air fuel mixture stays right so engine will last longer. In olden times there was a four bbl manifold available for those twin carb cars. Syncronizing twin carbs is tricky and the air filter was wrapped around the velosity stacks inside the orange air filter assembly. I reccomend repairing the fuel injection. Originality is what sells those Z's

What a trip it would be to try propane! I've converted a lot of engines over to propane. The way I see it, leave the injectors in and adapt a propane throttle body to the intake. It's not really hard, but mounting a tank might take up a lot of room. I did it when I found out I could buy fuel at $1/gal cuz I had a 1000 gallon tank at home and I bought a full truckload together with my neighbors. Talk to your local propane dealer, I bought my stuff from Meeder Equipment in Fresno, CA.

Some of the older ones had carbs. You'll have to swap out the intake with one of those of the older vintage and you should be good to go.
