It depends on what it's for. A paraphrased word definition can often be handled in one sentence. Something for a paper can require 3 paragraphs (base it on your subject matter, if it's for a theme). For example: If I'm writing about the long, hot, summer, I can summarize it ( give a "brief description") by saying: The days, relevant to Texas, are generally long, extremely hot, and dry. This year has been an exception, due to above-average rainfall.
If I'm writing an essay on my feelings regarding how Bush has handled things in Iraq, even the briefest summary, would "give grace" to the topic in three paragraphs. One word would get the paper returned to you with "orders" from the instructor, a one-time-chance, to "fix it" or the grade would be given, probably a very low one, with advice to "make these explanations longer in the future."

Make it a paragraph, unless the subject matter calls for more. In that case, make it two.
