When driving I enjoy watching how the scenery changes as I go through different geological areas. On a plane I enjoy watching the clouds or distance landscape.

Some people like to try different food and make sure they eat in local restaurants that specialize in the food of the area.
Some people just like to get far enough away from home that they can relax without worrying about the day to day stuff.

look up the points of interest at the places you are going to and see what you like and might want to do when you get there. I live in Massachusetts and could tell you what you might like here but what i like doing you might not like.
