The Paris has an excellent buffet. What sets the Paris apart is the amazing quality and variety of the Desserts.
If you just want an amazing dessert or snack, go to the Paris and on the walkway to Bally's there is a small Coffee shop and Bakery pastry shop......IT IS THE BEST!!!!
If you are a non smoker, the Paris has the best air handling system so that it never smells like smoke which plagues a lot of the casinos and buffets.

I didn't go to very many buffets, but the dinner buffet at the Excalibur was huge and maddening... I wanted to eat so many more things than would actually fit inside me. I could've eaten there every night without ever eating the same thing twice!
The breakfast buffet at the Las Vegas Hilton was pretty impressive, too... they'll make omelettes with whatever you want, and they have cocktail shrimp on the buffet... I must've eaten a pound of those...

The Palms opened a new buffet on Flamingo road.
Gold Coast is okay. Across the street from The Palms.
Planet Hollywood has a very good buffet.
Worst to stay away from: Palace Station unless you have a 2 for 1 coupon.

I have lived in Las Vegas for 3 years now going to college at UNLV and I'd have to say the best buffet is "Feast Around the World Buffet" at Green Valley Ranch. Take the 215 to the Green Valley Pkwy. exit and its easy to see where the casino is from there and then just go inside and go to the buffet. Its moderately priced and believe me you get your money's worth. I leave STUFFED every time.

Mandalay Bay has the best buffet. I don't believe any of the other buffets have warm crab legs, just cold. Who wants to eat cold crab legs? I think the price is $26, which is a little cheaper than Bellagio and Wynn buffet.

Check out the buffet at the Bellagio if price is not the issue (I think it is like $40). This buffet is AWESOME with premium foods, not Costco style mass production food. Remember, while in Vegas....always bet on black.

i live here and the sterling buffet at ballys is incrdible. ballys itself isnt that good. but that buffet is to die for. oh and thats during the weekends only.
if not the four seasons buffet is delicious. again only on the weekends and that one is a brunch.
honestly. i think regular restraunts are better then buffets. some good ones are- del friscos, verandah room @ 4 seasons, benihana's ( i dont know if that how you spell it nut its at the hilton), the melting pot, the prime rib, tbones@ redrock station. and thats pretty much the majority if it.
hope these help!

The Palms, Luxor, and Mandalay Bay have THE best buffets that I've been to. My friends who are locals say The Mirage is also good, but I haven't been to that one.
The one at the Palms is rated in the top 10, according to several visitors' guides that I've read.

My family and I love the breakfast buffet at Mandalay Bay .It's worth a trip over there , even if you are not staying there.
The lunch buffet at the Rio was nice too.
Have a great time.
