I have the thermostat set on 79 because it just isn't keeping up. It still doesn't keep up at 79 until the evenings when it cools off outside. The thermostat seems to be working because once it cools off, the unit kicks on and off like it should. I don't know if my ducts needs to be cleaned or if this could be a freon problem.

Things to check: when it is running, does ice form on the lines at the compressor? If so, than you are for sure low on freon. Is your unit big enough to handle the size of your home? an average size home needs a 2 or 2 1/2 ton unit to cool it. Is your themostat reading correctly? did it work right last year?

Could be either a freon problem if it is not cooling. But, could also be a thermostat problem if it is running continuously and then sometimes cuts on/off.

I keep mine on 68 and on days when it's 90+ outside, it rarely drops below 72 until well after dark. But, 79, it should be able to cool to that (unless you are in an area where it is 100+ all day long).

When was the last time you had your unit checked by a professional? If its been more than 2 years get someone out to look at it.

You are probably short on freon. I get mine checked every year at the beginning of the season and I usually have to have some freon added to the system. It costs ~$100 for the service call.

Is it freakishly hot in your area right now and did it used to keep up at these conditions in the past? A lot of A/C's are deigned to keep at most a 15 degree differential between outside and inside, so if it is 100 degrees outside it will have a tough time keeping the temperature below 80.
