Its unlikely to be the food that is causing the constipation but more likely the lack of water. Your bowels need a regular amount of water to help with keeping yourself regular. On a plane ride, the air is dry to begin with, which dehydrates you. Most people do not drink enough water on the plane. Additionally, if the plane ride is part of a trip, you are likely not drinking enough water on the trip or eating less fruits/veggies/high fiber foods since going to bathrooms isn't as convenient as when you are at home.

Like "the_only_solorose" said it sitting in one place for a long time.

Other reasons that I can think of:
1) Less water or fluid intake in the plane
2) Less humidity(reduces water level in the body)
3) Upset sleep pattern.
4) Coffee (dehydrates body)

Pilots now-a-days recommend for frequent walks inside the plane and strech exercises and more water intake instead of coffee.

Try the pilots suggestion. It worked for me.

Salt.

Plus flying is very dehydrating, so it may not be the food.

Drink lots of water before during, and after. And bring your own sandwich.

it isn't the food, it's the sitting for long periods of time on the plane that constipates.
