Depends on wich vampire mythos we're talking about. In the more magical universes, it's the life-force, not the blood itself, that's important, so any vital body fluid could work. Bile, maybe.
In a more scientific one, synthetic hemoglobin, or some other sort of scientifically generated protein fluid might suffice.

It would probably just die. They need blood to live so if they were allergic to blood they'd drop dead in a short time.
