I have a 2002 vw jetta and I can't find the transmission dipstick for some reason? Also, what fluid do I need? Dexron II, III or V? What is the difference?

There is no dipstick for the transmission. You will instead need a VW scan tool to detect the temperature and level of the fluid. The fluid you will need is called Pentosin and is solved at the VW dealer for around $12-14 a quart. You can find it cheaper at VW specialists on the web. DO NOT under any circumstances use anything other than Pentosin or your transmission will suffer a catastrophic and expensive failure. The best option would be to go to a VW specialist who has a VAG com/ scanner to check the level. The transmission in your can if it's a 4 speed (non Tiptronic) is fairly week. You should change the fluid and filter regularly and ignore VW's guideline that it's a "sealed transmission".
