A traditional hotel for special occasions is the Hydro Majestic in the Blue Mountains http://www.hydromajestic.com.au/ although it is not exactly cheap. Canberra is an easy three hour drive from Sydney and is an excellent place for a weekend away with lots to see and do. There are hotels and resorts in all price ranges.

Lock the door in the back of her. Pay the expenses ,take a seat on the settee, crack open a lager, or come on all the way down to Swanky Frank's and have a dogs with me. Watch television, scratch what itches, have a brilliant time. On Sunday at 4 open the basement door and tell her to get upstairs and make you some dinner. You get to save money and nevertheless get a weekend on my own, with Sunday dinner intact. <--- might make a brilliant husband.

Take a look at kayak.com. It runs a search of all hotel sites and allows you to filter exactly what price, how many stars, and where it's located. Then you can look at pictures and read the amenities of the place and decide which place looks best for you.

I'd look for something on the Central Coast, Port Stephens / Nelson Bay or the Hunter Valley.
Would she prefer wineries, whale watching, markets, beaches or relaxation?
