Summer squash is best when picked at about 4 to 6 inches long. Those 10 pound zucchinis are seedy and bitter. Winter squash needs to ripen until fall. Pick before frost, then you can cure it and it will keep in a cool area indoors all winter long.

If it is summer squash (zuchini), it is ready when it is the size you want to eat it. If it is winter squash, you wait until the shell hardens and pick it before frost

usually its best picked when it gets between 8 to 10 inches long. Anything longer than that, they end to get too seedy. I have had some grow in my garden to about feet long and I wondered the same thing.
