I have to perform a complex problem but first I need to get an estimate of the % of organic molecules in a normal diet. It's not in our text so I've been looking online and so far cannot find.

I would start by identifying which food components are organic, and which aren't.

Fats, proteins, and carbohydrates are all organic molecules, without exception, since they're all made largely of carbon. Vitamins are also organic molecules.

However, minerals like calcium, magnesium, etc. are not organic (though they may be necessary for human life).

So, you could start by trying to find out the fraction of food that is made up of minerals. My guess is that it's very small; 1% or less.
