Ghost hunts are traditionally done at night for two reasons. Not only is night a more active time for the spirit realm, but it is easier to see ectoplasmic and other forms. I also think there might be a sense of mystery and danger in doing them at night.

I have been involved with the Paranormal since I was 5 years old. I am in a Paranormal group and it really depends on where you go to do an investigation during the day.
Our group has done day and night investigations and have gotten the supernatural at both times of the day and Thar includes apparitions and orbs and good EVPs.
Myself I prefer to do an investigation at night as it does make it more scarier and the ones who will not appear during the day will appear in the dark. We have gotten some real good things at dusk.
That seems to be when the nasty ones come and either try to really scare you or try to hurt you. I have been hurt by more spirits at dusk and we have been lite ally ran out of a place and I mean we were running for our lives with all we had in us.
So, I guess like I said it is where you want to do your investigation can really gauge a good time for you. I am only speaking from my own ways and why. But, dark is scarier and there is less commotion if you are going to go to say a store or something that is only open during the day. So, in reality not all ghost hunts are not always held at night.
Hope you get the answer that is right for you.

My mother and i are really into the supernatural so i've picked up some info on the way. But i'm no self-proclaimed expert here.
1). The equipment used. Types of equipment are such as cameras, infared cameras (sense temperature differences), and such instruments that record frequency. At night, it is easier to record these because you do not have to have lights/minimal electricity (meaning no frequency interference), temperature variations are minimized, and other factors such as noise or people can be brought to a minimum.
The whole point of a "ghost hunt" is to get evidence that the supernatural even exists. You want little as possible to interfere with something that you think is a real supernatural experience.
2). ghosts hunts are also made to be shown on television. What fun or spooky would it be to watch people do this in the daytime?
3). Activity. Most supernatural experiences seem to be more active during the night time. There fore, best chances to ''catch a ghost" would be when it's dark.
That's bout all i know... hope this helps.... :O)

Ghost hunts are done at night because that's when they are the most active, after midnight and some believe that 3:15 am is the best time.
Although some are active during daylight hours.

Night commonly has more paranormal activity. It also makes it easier to see orbs or any light source a spirit might emanate. Also, without all of the light, I imagine the spirits feel more comfortable with an environment that makes it harder for humans to navigate. Also, it's easier to catch them on tape at night because the there is no light, therefore no lighting that could be mistaken as a spirit.

All I can base this on is my own experience from living in a haunted house, but the spirit was only active at night. Not only that but he only appeared between August 23 and Christmas starting out strong and then appearing less and less.

I would assume it's so the activities of daily living don't interefere with the equipment.
Check out Ghost Hunters on Sci Fi, the gang from T.A.P.S. is phenomenal but they hunt at night cause they have day jobs.

Having been a professor of photography at a couple of different colleges / universities, I encouraged my students to experiment with their cameras and different speeds of film to "create" a "ghostly" type of effect. Ghosts can "supposedly" make themselves more easily "known" during the night time. And, that's the time of day, with full moon lighting that one should attempt to "create" those photos. HTH!
